Chicken & Veggie Quiche Muffins | Keto

Mmmm, this quiche muffins…they are a hit here!

In my previous post, I talked about my postpartum weight lost progress and how I took up on the Keto diet. When I first researched for recipes, I was overwhelmed! In some ways, I was nervous because I did not know what I was doing initially. I knew, however, that I wanted a handful of recipes that were:

  • Simple (Use less than 12 ingredients that are budget friendly)
  • Good for more than one meal (I just do not have time to cook everyday)
  • Easy to grab and go (So important for my husband especially)
  • Of course, tasty (Because why waste time if they are not flavorful?!)

Therefore, my plan was to find two Keto recipes that I could batch make to eat on the go in the mornings. I came up with two recipes that have worked really well for my husband and me: quiche muffins and salmon cakes. In this post, I will share my Chicken and Veggie Quiche Muffin recipe. The next recipe I post will be for the salmon cakes.

Chicken Veggie Quiche Muffins
I just got a new camera (Canon t6i) and am dabbling into food photography and staging. FYI: the orange juice is not Keto friendly.

The top reason I love this quiche muffin recipe is because it is so versatile! The ingredients are very interchangeable so this recipe does not get mundane. Although I used leftover pan-fried chicken in this recipe, I have used cooked turkey sausage. Another time, I added spinach. Both times, the quiche muffins came out delicious. Switching up the cheese and spices bring new flavor to the recipe. This quiche muffin recipe is surely an endless option to add as a part of the Keto diet. Hope you enjoy the recipe!

Keto Chicken + Veggie Quiche Muffins

Nutrition Facts: 240 calories 15 grams net carbs

Ingredients

  • 9 Large Eggs
  • 1 Cup Cheese, shredded (I used Cheddar)
  • 1 Cup Chicken, cooked and chopped (I like to use leftover pan-fried chicken)
  • 1/2 Small Red Onion, diced
  • 1/2 Bell Pepper, diced
  • 1/2 Tsp Garlic Powder
  • 1/2 Tsp Pepper
  • 1 Tsp Salt

Instructions

  1. Preheat oven to 350F.
  2. In a large bowl, scramble the eggs. Then mix in the seasonings, chicken, veggies, and cheese.
  3. Pour mixture into 12 muffin tins. I love my silicon muffin tray for easy nonstick food removal and clean up. If using a metal tray, oil first before pouring.
  4. Bake in oven for 20-22 minutes.
  5. Let cool for 5 minutes and enjoy!

  • Total Fat: 15 g
  • Total Carbs: 3 g
  • Dietary Fiber: 0.5 g
  • Net Carbs: 2.5 g
